Chocolate Avocado Truffles

Sometimes, you just want to indulge.

You want to say, “to heck with that diet, I’m going to EAT THE CAKE and I’m going to love every second of it.”

Am I right?!

Well, these little balls of bliss are for YOU!

They’re loaded with chocolate, vanilla, chopped nuts and… avocado!

I lost you at avocado, didn’t I?

Listen, I really tried to make these UNhealthy and fattening… I really did.

But, when I learned frozen avocado could be whipped into a blessed ball of goodness… I just couldn’t go off-brand.

So, true to form, these are indeed healthy, but truly decadent.

They’re also crazy-easy to make!

You just basically mash up two medium avocados.

I like to add in a little cinnamon for added sweetness and vanilla for a little richness.

Melt one bag of your fav chocolate chips (I used Enjoy Life Dairy-Free Chocolate Chips).

I like the double broiler method where you place a little water in a pan on the stove, place a bowl inside the pan and melt the chips.

You could also use the microwave— 30 second intervals, stir, back in microwave until fully melted.

You then combine the melted chocolate and mashed avocados.

Pop the bowl in the freezer for 30 minutes, then use a cookie scooper to make uniform balls.

Roll the truffle balls in nuts.

I used hazelnuts. I feel like these guys are grossly underrated. They’re filled with vitamins, minerals, antioxidants and healthy fats, plus provide a different, nutty flavor.

You could use pistachios, walnuts, almonds… you could even roll them in coconut flakes, cacao  powder, or other superfoods.

The possibilities are endless.

The result?

A delicious, nutritious, ball of joy that won’t break the weight loss bank, OR the actual bank! You can buy most of these ingredients in bulk at the warehouse stores. 🕺🏼

Here’s what you’ll need for these Chocolate Avocado Truffles:

Ingredients:

2 medium avocados

2 cups chocolate chips (1 bag of chips)

2 teaspoons non-alcohol vanilla

1/2 teaspoon cinnamon

3/4 cups chopped nuts (hazelnuts, pistachios, walnuts, almonds)

Directions:

1. Mash 2 avocados in medium size mixing bowl, add in cinnamon, vanilla, stir, set aside.

2. Melt chocolate chips using preferred method.

3. Combine avocados and chocolate. Mix well, pop in freezer for 30 minutes.

4. Use a cookie scooper to make truffles, roll into balls and then roll balls into chopped nuts.

5. Serve

*Store and serve in/from the refrigerator.
