Tangy Tahini Zughetti

What do you get when you cross zucchini and spaghetti?!  Zughetti! A light, no carb noodle that looks like white spaghetti noodles, but has way more health benefits, vitamins and minerals.

I recently did a post on Mushroom Zughetti , an easy, flavorful Italian recipe made with zucchini noodles and marinara sauce.

This dish however, has more of an Asian flare. It’s super easy and all you need is one zucchini and a vegetable peeler.

I recently got this three set peeler from William Sonoma. It’s a great buy and also more convenient than using my spiralizer, especially when I’m making a small dish such as this.

As you can see the red and green peeler provide a flat, wide noodle. The red does have a serrated edge to create a little more interest, while the green is just a solid, straight edge. The orange has a zig-zagged edge to give you a julienne affect, which is what I used for this dish.

Before you start peeling your zucchini though, you’ll want to make its dressing.

Tangy Tahini Dressing Ingredients:

1 Tbs. tahini
1 Tbs. extra virgin olive oil
1 Tbs. tamari (soy sauce, gluten free)
the juice of 1/2 of a lemon
1 tsp. ginger (grated)
1 garlic clove (grated)
~ makes 1/2c. dressing

1. Combine all the dressing ingredients in a small bowl, give it a good whisk and then set it aside.

2. Grab a cutting board and 1 zuchinni. Hold one end of the zucchini while you run the peeler down the center of the zucchini. Repeat the process until you’ve made your way through the zucchini, down to the cutting board and there is nothing left to peel.

~1 regular zucchini will yield 2 cups of noodles.

3. Next, you’ll want to chop up a few veggies to add in with your noodles.

Zughetti Ingredients:

1 cup of spinach chopped (or 1 kale stalk, chopped)
1 carrot peeled and sliced
2 Tbs. hemp seeds
1 Tbs. sesame seeds

4. Add your chopped veggies to your zucchini noodles and your seeds. The hemp seeds will provide a little extra protein while the greens you add in, will give you a nice dose of calcium and iron.

5. Take just 3 Tbs. of your Tangy Tahini Dressing and pour it over the noodles and veggies. Toss lightly and then serve immediately.

This will serve one to two people. If you are serving more people, you can easily double the Zughetti ingredients. You will *not* need to make more dressing as you will have plenty left over from this first batch. I usually put it in my dressing shaker and save what’s leftover, for a future salad.

There you have it! A light, easy zucchini salad that’s full of flavor, vitamins, minerals and protein. Try it for lunch or dinner!

*Don’t let the exact ingredients shy you away from trying this. If you don’t have tamari sauce, use any soy sauce. If you don’t have hemp seeds, just leave them out, or put sliced almonds or walnuts. If you don’t have lettuce, throw in something else green like broccoli. Take your own spin on this! Have fun!
