Hummus & Hemp Seed Boats

Okay… So, I didn’t reinvent the wheel on this one, but it IS a quick and easy snack that I came up with when I was on a “I-want-salty-carb-filled-chips,” but my body was more like “you-should-stick-to-celery-and-water” kind of state. Surely, you can relate?!?

I absolutely love buying these small romaine leaves from the farmers market. I’ll get a couple of heads each week and usually reserve them for my “Taco Tuesday” nights.IMG_2081

So, imagine my surprise when I realized they work great as a dipping alternative as well!

Just wash the leaves under cold water. Chop the very end off (the white end- part). Pat the leaves dry with paper towels and they are ready to go!

Ingredients:

1 & 1/2 Tbs. of hummus

3 cherry tomatoes

1 head of romaine, use 3 leaves

1Tbs. of hemp seeds

I used a little over a tablespoon of hummus and divided it between three leaves. This particular brand, Cedars, only has a few ingredients listed on the label and no added sugar or citric acid. Good stuff.

I then sprinkled one tablespoon of hemp seeds between the three leaves on top of the hummus. Hemp seeds provide added protein and iron, not to mention a great nutty flavor and crunch. I try to add them to dishes as much as I possible. I also cut up three small cherry tomatoes, for some lycopene, and garnished on top.

There you have it. A quick and easy snack, filled with protein and all natural ingredients! A good afternoon pick me up that won’t have you feeling weighed down.
